Este artículo es un avance de un estudio sobre las repercusiones de las migraciones y el turismo en el patrimonio cultural. En este trabajo nos enfocamos en el aporte de inmigrantes en las prácticas alimentarias la población costarricense. El propósito es conocer las comidas representativas de los migrantes y saber cuáles son los mecanismos para reproducirlas.
La cultura costarricense se configuró con el aporte de amerindios y migrantes de todos los continentes, entre los que destacan los chinos, italianos y afrocaribeños insulares que llegaron en distintas oleadas durante la segunda mitad del XIX. Costa Rican population. The purpose is to know the representative meals of the migrants and to
know what are the mechanisms to reproduce them in Costa Rica.
The Costa Rican culture was shaped by the contribution of Amerindians and migrants from
all continents, among which are Chinese, Italians and Afro-Caribbean island peoples, who arrived in different waves during the second half of the 19th Century. In recent years, the largest
number of immigrants came from Nicaragua and Colombia.
