Effect of airtight storage on the cooking time of common bean (Phaseolus vulgaris L.)
Resumen
Con el propósito de evaluar el efecto del almacenamiento hermético sobre los cambios en el tiempo de cocción , se almacenó, en forma ventilada y hermética, grano de un lote de frijol rojo y otro de negro, con 13 y 15% de contenido de humedad y a cerca de 25 °C. El grano se muestreó durante 15 meses para evaluar su contenido de humedad y tiempo de cocción. Para el análisis de los resultados del tiempo de cocción se hizo análisis de variancia por tiempo de muestreo y la separación de los efectos de los factores por medio de la prueba de contrastes ortogonales. Solamente hubo diferencias significativas con el tiempo de cocción a partir del tercer mes de almacenamiento, siendo mayor el tiempo de cocción del grano de testa negra . El contenido de humedad tuvo efecto solamente a los 15 meses de almacenamiento donde fue mayor la cocción del grano con 15% de humedad. No se encontraron diferencias significativas entre el tiempo de cocción del frijol almacenado herméticamente y el que fue ventilado periódicamente. In order to evaluate the effect of airtight storage on the cooking time of common bean, red and black grain beans containing 13 and 15% humidity were stored at a temperature around 25 °C, under airtight and aerated conditions. The grains were sampled during 15 months to determine their humidity content and cooking time. An analysis of variance was conducted for the sampling time and the separation of the effects from the factors with an or thogonal comparison test. There were significant differences on the cooking time only after the third month of storage, take the longest cooking time by the black faced beans. The humidity content showed differences only at 15 months of storage, where the longest cooking time was for those with 15% humidity. There was no difference in the cooking time for the beans heraetically stored and those that were periodically ventilated.
