Resumen
El cultivo de papaya ha aumentado significativamente en la región Atlántica del país.
Aproximadamente su cultivo alcanza las 1000 hectáreas de producción, permitiendo
el desarrollo de pequeños y grandes productores que han visto una oportunidad de
negocios en sus fincas para la producción y comercialización de papaya a nivel
nacional e internacional. Además del aumento de exportaciones de papaya fresca
a mercado internacional, de forma paralela, viene el crecimiento de valorización de
estas materias frescas a otros productos, entre ellos frutos secos o deshidratados
que ganan terreno en el mercado.
Para la producción de papaya deshidrata los productores de la zona harán llegar su
producto a la planta para su compra. Este producto se evaluará y posteriormente
entrará en el flujo de producción de deshidratación osmótica.
En la ejecución de este proyecto se requiere un terreno de 8000 metros cuadrados
(m²), planta de producción, zona de recepción de la materia prima fresca, cuartos
fríos, líneas de producción entre otros. La inversión de activos y capital de trabajo
es de ₡264.226.840,50
Las cifras de este proyecto evidencian un TIR 24,39%, VAN ₡140.056.345,62 e ID
₡2,39. Considerando estos datos podemos concluir que el establecimiento de una
planta procesadora para la producción de papaya deshidratada es totalmente viable
económicamente.
Papaya cultivation has increased significantly in the Atlantic region of the country. Its cultivation reaches approximately 1000 hectares of production, allowing the development of small and large producers who have seen a business opportunity in their farms for the production and marketing of papaya nationally and internationally. In addition to the increase in exports of fresh papaya to the international market, in parallel, there is a growth in the value of these fresh materials to other products, including dried or dehydrated fruits that are gaining ground in the market. To produce dehydrated papaya, the producers in the area will send their product to the plant for purchase. This product will be evaluated and subsequently enter the osmotic dehydration production flow. In the execution of this project, a land of 8000 square meters (m²) is required, a production plant, a reception area for fresh raw material, cold rooms, production lines, among others.
