Abstract
El objetivo de este trabajo fue
determinar el efecto del filtrado con membrana mixta en la
leche de bovinos. Esta investigación se realizó en el Módulo
Lechero-SDA de la Universidad de Costa Rica, entre el 10
de mayo del 2010 y febrero del 2011, en el cual se realiza el
ordeño automático con ayuda de un sistema de recipientes
recolectores. En 112 ocasiones, se tomaron muestras de
100 ml de leche del recipiente recolector, antes y después
del filtrado. La determinación de los componentes de la
leche se realizó por medio de la metodología descrita por la
FOSS Electric A/S para el equipo MilkoScanTM FT 120 Type
71200, mientras que los conteos de células somáticas se rea-
lizó según la metodología descrita para el equipo Fossomatic
Serie 400. Los contenidos de proteína, lactosa y el conteo de
células somáticas no variaron significativamente, mientras
que, el contenido de grasa y el porcentaje de sólidos totales
sí se afectaron por la práctica del filtrado. Esta reducción,
provocó una disminución del 3,04% del ingreso total por la
venta de leche.
The purpose of this work was to evaluate the effect of filtering raw cattle milk with a mixed membrane. This research was conducted in the Dairy-SDA Module at the University of Costa Rica, between May 10th and Febuary 2011, where milking is performed automatically with aid of a system of jar collectors. Samples of 100 ml of milk were taken from 112 jars before and after filtering using a funnel. Milk components determinations were performed using the FOSS Electric A/S for the MilkoScanTM Type 71200 FT 120 equipment, while a somatic cell count was performed according to the methodology described for Fossomatic Series 400. Protein, lactose and somatic cell milk content did not change significantly, while fat milk content and milk total solids percentage were affected by the filtering practice. This reduction resulted in a decrease of 3.04% of total revenue from the sale of milk.
