El objetivo de este trabajo de investigación es determinar la prefactibilidad de mercado, técnica y económica para la inversión en un establecimiento comercial para la venta de batidos tipo smoothie a base de frutas y vegetales en la ciudad de Guápiles, Costa Rica, tomando en consideración que el consumo de batidos aumentó un 120% entre 2010 al 2015, en gran parte gracias a la popularidad de los smoothies, los cuales son productos que los consumidores perciben como un sustituto saludable a las bebidas carbonatadas, una alternativa a los alimentos procesados y al aporte nutricional de las frutas y vegetales, convirtiéndose en la opción preferente para aquellos consumidores que apuestan por lo saludable, nutritivo y lo conveniente, además que en Costa Rica, la industria de jugos y purés de fruta ha tenido gran desarrollo.
Otro factor para considerar es la pérdida de fruta que se presenta anualmente en el país, a lo largo de la cadena de servicio, en donde congelar dicha fruta surge como una alternativa para la preservación. Por otro lado, la tendencia mundial de la industria alimentaria, apuntan al desarrollo de opciones de alimentos diferenciados, naturales, autóctonos y sostenibles, aunado a las condiciones climáticas de la zona de Guápiles, en donde las temperaturas generalmente oscilan entre 22 °C a 31 °C con un alto porcentaje de humedad, generando un entorno óptimo para el mercado de bebidas tipo smoothie.
En función de la demanda estimada, el negocio se atenderá con un dependiente a tiempo completo y otro a medio tiempo para cubrir días libres y días de alta demanda, además se logró proponer un modelo legal para el establecimiento de un local comercial para la venta de batidos.
De acuerdo con la evaluación financiera de la inversión, el proyecto muestra indicadores positivos de Valor Actual Neto (VAN), Tasa Interna de Retorno (TIR), Periodo de Recuperación de la Inversión (PRI) e Índice de Deseabilidad (ID).
Según el estudio de sensibilidad realizado, la demanda podría reducirse hasta un 44.05% o el precio disminuir en un 46.66%, obteniendo todavía valores positivos del VAN.
The objective of this research is to determine the market, technical and economic prefeasibility for investment in a commercial establishment for the sale of smoothies based on fruits and vegetables in the city of Guápiles, Costa Rica, taking into consideration that the consumption of smoothies increased by 120% between 2010 and 2015, largely thanks to the popularity of smoothies, which is a product that consumers perceive as a healthy substitute for carbonated beverages, an alternative to processed foods and the nutritional contribution of fruits and vegetables, becoming the preferred option for those consumers who bet on the healthy, nutritious and convenient, in addition at Costa Rica, the industry of juices and fruit purees has had a great development. Another factor to consider is the loss of fruit that occurs annually in the country, throughout the service chain, where freezing the fruit emerges as an alternative for preservation. On the other hand, the global trend in the food industry point to the development of differentiated, natural, indigenous and sustainable food options, coupled with the climatic conditions of Guápiles, where temperatures fluctuate between 22 ° C and 31 ° C with a high percentage of humidity, generating an optimal environment for the smoothie beverage market. Depending on the estimated demand, the business will be served with a full-time employee and another part-time employee to cover days off and days of high demand. In addition, it was possible to propose a legal model for the establishment of a commercial premises for the sale of smoothies. According to the financial evaluation of the investment, the project shows positive indicators of Net Present Value (NPV), Internal Rate of Return (IRR), Investment Recovery Period (PRI) and Desirability Index (ID). According to the sensitivity study carried out, the demand could be reduced up to 44.05% or the price could decrease by 46.66%, still obtaining positive values of the NPV.
