Composición químico-nutricional en diferentes tallas y sexo del cambute strombus graciliar (Mesogastropoda: Strombidae) de Playa Panamá, C.R

Resumen
Se obtuvieron 74 ejemplares de cambute (Strombus gracilior) de Playa Panama (100 35' 45" N. 840 40' 09" W). Costa Rica. La proporción de sexos fue de 1:1 y el ámbito de talla 70-80mm (longitud total). El rendimiento promedio fue de 80% de carne comestible. Los valores promedio de los macronutrientes para ambas tallas fueron: humedad 7/6% machos y 70.9% hembras, proteínas 19.09g% machos y 26.89g% hembras; carbohidratos 1.85g% machos y 1.35g% hembras; fibra cruda 0.44g% machos y hembras. Las cenizas mostraron variaciones (2.30-3.71g%) entre talla y sexo. Los lípidos presentaron un valor máximo de 0.94 y 0.91g% en la talla de 80mm pare machos y hembras respectivamente.En minerales se obtuvieron valores máximos para el Na y el K de 1440.88 y 1898.33ug/g respectivamente, en machos de 80mm; hembras de la misma talla presentaron valores de 1376.97 para el Na y de 2393.02 para el K; los otros minerales (Cu, Mg, Fe) presentaron valores bajos en relación con los anteriores pero los esperados según la literatura.
74 individuals of "mini:sate (Stroathar gracilior), were collected in Playa Panamá (10°35'45" N, 85040*09" W), Costa Rica. The sex ratio was 1:1 and the size range 70-80mm (total length). The yield was 80% of edible meat. The average values of the microconstituents to both sizes were: water 72.6% males and 70.9% females; 19.09g% protein in males and 26.895% in females; carbohydrates 1.85g% males and 1.35g% females; 0.44g% crude fiber both males and female; within ashes there were variations (2.30-3.71g%) among size and sex. Fat reached a maximun value of 0.94 and 0.91g% (length 80mm) for males and females respectively. In minerals, maximun values for the Na and K of 1440.811 and 1898.3314dg respectively were obtained for 80mm males; females of the same size showed values of 1376.97ug/g for the Na and of 2393.0908/g for K; the other minerals (Cu, Mg, Fe) had lower values in relation to the above but the normal according to the literature.
